Ingredients

  • 908g unbleached bread or all-purpose flour (most likely more, to adjust the texture)
  • 184g granulated sugar
  • 14g salt
  • 156g unsalted butter (room temp.)
  • 2 large eggs
  • 10g lemon extract
  • zest of 2 lemons (optional but ads to the flavor)
  • 12g instant yeast
  • 510g whole milk (warm to disolve and activate the yeast)
  • 226g cinnamon sugar (184g granulated sugar + ~24g ground cinnamon)
